Somerset Mackerel

Somerset Mackerel
Serves 4
8 Mackerel Fillets
1 small onion, finely chopped
15ml (1tbsp) French Mustard
60ml (4tbsp) cider
Juice of half a lemon
25g (1oz) Butter
15ml ( (1tbsp) chopped parsley

Put fish in a greased ovenproof dish, sprinkle the onion over. Put mustard, cider, lemon juice butter and parsley in a pan and heat gently until butter melts. Pour over fish. Cover and put in a med oven for 10 mins. Uncover and cook for a further 10 mins or until fish is cooked
